Corn and Zucchini Fritters


  • 4-5 Zucchini’s
  • 1 onion
  • Tin of corn
  • Cup of grated cheese 
  • 2 eggs
  • 2/3 cup flour 
  • Paprika, salt & pepper


Grate zucchini & onion and squeeze out as much liquid as possible. Add in the drained corn, cheese, eggs & mix, add flour until a thick pancake like mixture. 

Add paprika, salt & pepper to taste. 

Spoon palm sized blobs onto a medium head flat BBQ Plate or pan with a little oil until crispy & brown.

Serve warm with a dollop of tomato relish! 

For a big breaky add bacon, eggs & halloumi.

Why not make a double batch & freeze the fritters in a container between layers of baking paper for a quick brekky on the run! Chuck them on the BBQ frozen or zap them in the microwave if you’re in a real rush.
