Family Size Banana Cake

Cooking Time: 60 minutes



  • 1 cup vegetable oil
  • 1 1/3 cup caster sugar
  • 4 eggs
  • 2 3/4 cup self raising flour
  • 1 tsp bicarb soda
  • 2 cups mashed banana (about 5 medium over ripe)


Preheat oven to 140C fan forced. Grease a 23cm cake pan or a really big cake pan of another size.

Place all ingredients into mixing bowl.

Beat on low speed until combined. Scrape down sides of bowl.

Beat on medium speed for a further 2 minutes or until mixture has changed colour. Pour mixture into pan.

Cook in moderately slow oven for approx 1hr 15mins. Stand for 5 min before inverting onto a cooking rack.

Serve with either cream cheese or caramel frosting or both!
