- 1/2 cup SR Flour
- 1/2 cup grated cheese
- 1/2 cup milk
- 1/2 cup cream
- 4 eggs
- 2 tbsp melted butter
- 4 short cut bacon diced
- 1 small salad onion diced
- 1/4 cup cherry tomatoes halved
- 3 large silverbeet leaves roughly chopped
Pre heat oven to 160C fan forced
Grease or spray with cooking oil a 12 hole muffin tray (no muffin papers needed)In a large mixing bowl combine all base ingredients using a wooden spoon, mix until well combined.
Add fillings as desired, mix until well combined.
Spoon into muffin tray, holes will be very full.
Bake 25-30 minutes or until golden brown.
Makes 12 nice sized quiche muffins.
This recipe is flexible and you can omit fillings you donʼt like and add different variations such as zucchini, corn, sundried tomatoes, tuna, salmon, brown onion, chives, baby spinach or ham. Whatever you have in the fridge.
